This wonderful rich and savory dish utilizes one of the autumn's finest offerings, acorn squash. The combination of the fruit's sweetness paired with the lush texture of the goat's cheese creates a winning combination. Delicious with roasted chicken or baked salmon.

Yields four sides

Ingredients:
Olive Oil
1 Acorn squash
6 cloves garlic
4 – 5 ounces plain goats cheese
2 Tablespoons butter, divided
4 egg whites
2 egg yolks

Wondering what you can do with all of the cherry tomatoes you are faced with, besides just pop them in your mouth? This delicious dish is from the kitchen of our board member, Julie Daily (who also bakes her own delicious crusty bread to go with them). She says "this is a great recipe when the bounty of cherry tomatoes arrives!"
Ingredients

1 1/2 pounds whole cherry tomatoes
2 shallots, chopped
1/8 teaspoon dried crushed red pepper, optional
3 teaspoons fresh lemon thyme leaves
2 tablespoons extra virgin olive oil

With the summer grilling season and backyard parties in full swing, I knew it was time to come up with a quick and easy dessert that won’t leave you chained to the stove while your guests are frolicking in the backyard.  “Quick and easy” are not the only redeeming characteristics of these puff pastry tarts.  They also highlight the fresh flavors of lemon and berries.  And they’re so darn pretty to look at that your family and friends will think you slaved for hours.
