PORTUGUESE KALE SOUP

Recipe from Mary Beth Janerich, WCG volunteer extraordinaire

SERVES 4

This recipe has many traditional Portuguese variations. My favorite version takes advantage of all the carrots and turnips
which are usually abundant in my garden when kale is ready in the fall.

Ingredients:
3 Tbls olive oil
1 Tbls butter
2-3 lbs short ribs and/or stew beef
1 lbs linguica (Portuguese smoked sausage)*
*kielbasa is a suitable substitute
8 cups water

Did you know that the average family can compost 400 to 600 pounds of organics each year? That’s something to keep in mind when deciding what to do with your compost pile in the winter months. Even though the temperatures will drop and the composting process will slow down significantly you can still compost food and yard scraps and keep them out of the landfill!

Winter Compost Tips:
- For the winter months it’s a good idea to set up another compost container close to your house, a covered garbage can works well.
