Grilled Eggplant with Tomato and Goat Cheese

I picked up some eggplant and tomatoes at the farmers market last weekend and was determined to use both ingredients for my next recipe. This delicious appetizer is easy to make and makes a great compliment to any summer barbecue! Click here for the recipe!
