Why Conserve Water?

Paying attention to the amount of water we use in our homes and landscapes is important for the health of our communities and our gardens. Utah is the second driest state in the nation. It is surprising to know that our per capita water consumption levels are at 290 gallons/day/person - the second highest in the nation, and far above the national average of 180 gallons/day/person!

While it is important for us to use moderate amounts of water in our gardens,

Braised Orach and Sorrel

Orach (Atriplex hortensis) is an easy-to-grow, heat and drought tolerant annual plant that is eaten as a salad green.

Sorrel (Rumex acetosa) is a perennial herb that is grown for its superb lemony-flavored leaves.

Roasted Lemon Sunchokes

  • 1 pound sunchokes (known also as Jerusalem artichokes)
  • 1 T olive oil
  • 1 lemon, cut into sixths
  • 1 clove garlic, roughly chopped
  • Salt and pepper to taste
  • Fresh Thyme or Rosemary for optional garnish

Ingredients

  • 1 ½ C Butter, softened
  • 2/3 C Sugar
  • ¼ C Confectioner’s Sugar, sifted
  • 2 T Lavender Flowers, finely chopped
  • 1 T Fresh Mint Leaves, chopped
  • 1 tsp Lemon Zest
  • 2 ½ C Flour
  • ½ C Cornstarch
  • ¼ tsp Salt

Catnip Pesto

  • 2 Cups Catnip Leaves
  • 1/3 C Toasted Pine nuts or Walnuts (Optional)
  • 3 Cloves Garlic
  • 1/2 C Olive Oil
  • 1/2 C Parmesan
  • Salt and Pepper to taste

Pulse catnip leaves and nuts in a food processor. Add garlic and pulse some more. Leave processor running and drizzle in olive oil until combined. Scrape pesto into a bowl and stir in parmesan and salt and pepper. Makes 1 cup.
