Cucumbers: Nutrition and Storage

Nutrition: Cucumbers are a great source of vitamin K and C.

Storage: Cucumbers are usually waxed to prevent dehydration. Unwaxed cucumbers that are fresh from a farm or your garden have to be stored unwashed in a sealed plastic bag and kept in the vegetable crisper. This way, cucumbers can be kept for at least a week. To prevent spoiling, keep cucumbers away from ethylene-releasing produce such as tomatoes, apples, and citrus. Ethylene is a plant hormone that promotes ripening.
