Tenderized Tangy Kale
Preparation: 60 min, easy
Directions: Chop kale leaves into thin strips. Lay out on large cutting board or clean counter. Roll with rolling pin until "tenderized." Put in a bowl and add olive oil, fresh lemon juice, and a little salt. Place another bowl on top of the kale and place something heavy inside to weight down the kale underneath. Let sit for 30-60 min. Take off bowl and enjoy the benefits of raw kale that is as tender and tasty as if it were cooked! Experiment with other spices you like.
