Orach (Atriplex hortensis) is an easy-to-grow, heat and drought tolerant plant that is eaten as a salad green.

Season: Fall
Produce: Sunchokes (Jerusalem Artichokes)
Preparation: 90 min, medium difficulty
Ingredients:
6 cloves of garlic, diced
Two red onions, diced
Two leeks, diced
Canola oil
Two small dried chipotle peppers, whole
4 cups potatoes, diced
1 cup Jerusalem artichokes, peeled and diced
Approximately 5 cups soup stock (or water)
1 1/2 cups frozen corn (or fresh, precooked)
1 1/2 cups of non-fat, plain yogurt

Season: Fall
Produce: Sweet Potatoes
Preparation: 30 min plus time to cool down, medium difficulty

Ingredients:
1/4 cup rice vinegar
1/4 cup soy sauce
3 tablespoons mayonnaise
4 teaspoons peeled and minced fresh ginger
4 teaspoons toasted sesame seeds
4 garlic cloves, minced
1 tablespoon peanut butter
2 teaspoons garlic-chili sauce (found in the Asian section of many supermarkets)
1 1/2 teaspoons brown sugar

Broccoli is a very good source of dietary fiber, vitamin A, vitamin C, vitamin K, vitamin B6, folate, potassium and manganese.

1 large head of broccoli (about 1 3/4 pounds)
3 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1/2 teaspoon sugar
pepper
lemon wedges, for serving
