2013 Urban Garden and Farm Tour

Wasatch Community Gardens is pleased to present its Urban Garden and Farm Tour and we would love for you to be part of it!

When: Saturday, June, 22nd from 10 a.m. – 2 p.m.

What we are looking for: Local urban homesteaders, gardeners, chicken keepers, farmers, DIY-ers committed to sustainability and willing to show off their traditional and innovative efforts.

  
This workshop is part of a series of 4 seasonal cooking workshops hosted by Wasatch Community Gardens, Slow Food Utah, and Harmons City Creek that will take place throughout 2013. Local cook Brooke Cordray will teach you how to take the bounty from your garden and create healthy, delicious, seasonal meals that the whole family can enjoy.

Yummy Squash Casserole

A quick and easy Vegetarian weeknight dinner, this Squash Casserole recipe will delight everyone seated at your table. Recipe adapted from Mollie Katzen's The Moosewood Cookbook.

Serves 4, with leftovers

Ingredients:
One large Butternut or Hubbard Squash
Olive Oil, two applications
One Red Pepper
One Green Pepper
One White Onion
Three or Four Large Cloves of Garlic
One and a half Tablespoons Cumin
